Bullfighter beef stew

Serves 3

Ingredients

  • 600g stewing beef
  • 1 onion, chopped
  • 3 cloves garlic
  • 1 carrot, peeled and chopped
  • 1/2 bottle of red wine
  • Fresh thyme
  • Fresh rosemary
  • 2 bay leaves
  • 3 cloves
  • Olive oil
  • 50 Parma ham
  • Black olives
  • Butter
  • Flour
  • 250g Macaroni

Method

  • Fry the beef in a casserole until browned
  • Add the vegetables, rosemary, thyme and garlic and cook until softened
  • Add the Parma ham, and fry briefly
  • Add the bay leaves, cloves, olives and red wine
  • Simmer for 2 hours
  • Cook the pasta
  • Thicken the sauce with butter and flour to taste, season, and serve with the pasta
