Chicken and Olive Tagine

Serves 3


  • Cumin seeds
  • 2 Onions
  • 3 cloves garlic, roughly chopped
  • 1 piece ginger, roughly chopped
  • Spice mix
  • 3 chicken breasts, chopped
  • 1/2 litre chicken stock
  • Green olives
  • Fresh corriander


  • Heat some oil in a tagine, and add the cumin seeds until they crackle
  • Add the onions and fry until starting to brown
  • Add the garlic and ginger for 1 min, stirring regularly
  • Add the spice mix for 1 min, stirring regularly
  • Add a splash of water and mix in
  • Add the chicken and stir to coat in the spice mix
  • Fry, stirring regularly until the outside of the chicken is completely seared
  • Add the stock, bring to a boil and then reduce to a simmer for 45 minutes
  • Add the olives, for another 15 minutes
  • Garnish with fresh coriander
