Maryland Crab Soup

Serves 3

Ingredients

  • Olive oil
  • Butter
  • 1 rib celery, diced
  • 1 carrot, diced
  • 1/2 an onion, diced
  • Worcestershire sauce
  • 1/2 litre seafood stock
  • 1/2 tin chopped tomatoes
  • 1 potato, peeled and cut into cubes
  • 50g frozen peas
  • 250g crab meat

Method

  • Melt the oil in the butter
  • Add the celery, carrot and onion and soften, about 5 minutes
  • Add the tomatoes, stock and Worcestershire sauce and bring to the boil
  • Add the potatoes and simmer until soft, about 15 minutes
  • Add the peas until heated, about 5 minutes
  • Add the crab until heated, about 5 minutes
