Roast Vegetables

Heat your oven to 180C. Peel and chop whatever veg you want. Mix the veg with your choice of oil, and some combination of herbs and spices. I usually go with salt/black pepper/rosemary/thyme for a British vibe, or coriander/cumin/garam masala for more African/Asian/Middle Eastern style dishes. Roast for the times below, turning every 10 minutes or so.

Potatoes – boil 20 minutes, roast 50 minutes (see here)

Carrots – 30 minutes

Cauliflower – 30 minutes

Courgettes – 15 minutes

Onions – 30 minutes

Peppers – 30 minutes

Sweet potato – 40 minutes
