Saag Aloo

Serves 3

Ingredients

  • Turmeric
  • 500g potatoes, peeled and chopped
  • 125 g spinach
  • Cumin seeds
  • 1 onion, finely chopped
  • 3 cloves garlic, finely chopped
  • Ginger, finely chopped
  • Spice mix
  • Tomato puree

Method

  • Simmer the potatoes with turmeric and leave to steam cool
  • Blanch spinach and shock in cold water
  • Fry the cumin seeds until they crackle
  • Add the onion, and fry until browned, about 20 minutes
  • Add the fresh spices, 1 minute
  • Add the powdered spices, 1 minute
  • Add tomato puree and a splash of water
  • Add potatoes
  • Add spinach
